This past weekend was truly unforgettable! We had the pleasure of presenting a unique dining experience—a four-course “Chef’s Choice Menu” where diners were surprised with each course as it was placed in front of them and described by our server.

For Chef Jacq Borrego and me, this was an opportunity to showcase our creativity and culinary skills. We started by exploring the seasonal offerings at the Buford Highway Farmers Market in Atlanta, gathering inspiration and ingredients for our menu.

The evening began with a delightful amuse bouche: Yellow Tomato Gazpacho with Crispy Fried Prosciutto and a Picked Fresno Pepper. The interplay of flavors—salty prosciutto, spicy pepper, and cool tomato—set the stage for a fantastic dining experience, welcoming the arrival of Spring.

Next, we served a dish that captured the essence of Spring—Blanched White and Green Asparagus and Rainbow Carrots wrapped in Nori, accompanied by Lemon Yogurt, Enoki Mushrooms, and Salmon Roe, all drizzled with Pomegranate Vinaigrette. It was a refreshing and balanced dish that celebrated the season’s bounty.

One of the highlights of the evening was a playful take on the classic peanut butter and jelly sandwich: Tempura Fried Veal Sweetbreads with Cashew Puree and Cabernet Wine “Jelly,” topped with Fried Sage. It was a dish that challenged diners’ palates in the most delightful way.

For the main course, we served Prime Beef Filet, cooked to a perfect medium rare and served “roast style” with butter-poached lobster, roasted potato home fries, tarragon beurre blanc, and grilled spring onion. Despite being a hearty beef dish, it was surprisingly light and full of fresh flavors.

To end the evening on a sweet note, we served a light lemon ice cream (made in-house) over honey cake crumb, accompanied by fresh berries, pistachio, and an edible flower petal. It was the perfect ending to a truly memorable dining experience.

Overall, it was a weekend filled with creativity, delicious food, and happy diners. We can’t wait to see what the next Chef’s Choice Menu has in store!
